Best Chocolate Cookies

Whether you are on holiday or not, this is the perfect cookie to accompany your coffee, tea or hot chocolate. This cookie is soft and chocolaty, everything a good cookie should be. Making it if fun, quick and easy! If you give it a try, be sure to let me know, I promise you won't be sorry!




Preparation Time: 15 minutes
Bake Time: 12 minutes
Oven Temperature: 180ºC
Makes Roughly: 12 cookies

Ingredients:

300g Castor Sugar
200g Butter //room temprature
1 egg
275g Self Raising Flour
75g Cocoa Powder
chocolate chips or a chocolate slab broken into pieces

You'll also need a large mixing bowl.



Make:
Pre-heat Oven to 180ºC
Mix butter and sugar. (mixer or wooden spoon) //until it's nice and creamy.
Crack in the egg. //mixture should look a gross mess but just keep mixing till the egg is incorporated well.
Add in the flour and cocoa powder. //mix, mix, mix, until the mixture turns into a dark brown colour.
Add in the chocolate. //all the chocolate pieces should be covered with doughy mixture.

Almost there... Take a baking tray line it with wax paper or you could just use spray and cook.
Roll the mixture of dough in little gold sized balls. (or however big or small you'd like your cookies)
Flatten it and place it in a baking tray. (space it nicely cause they will spread when baking)

Pop the oven and bake for 10-12 minutes. // after you've taken your cookies out of the oven it will still be soft, so allow them to cool and harden. (I know this is the worst part, waiting, but it's all worth it)

Once cooled you can enjoy your cookie in all its goodness.
